Recipe :: Mom's Easy Cinnamon Popovers

Growing up, our family was small {4 of us} but you'd swear there were {12} of us when it came to gobbling up my Mom's popovers! Light, fluffy, eggy and filled with cinnamon. The aroma in the kitchen would draw anyone out of their post swim coma or physical exhaustion from tennis practice. These are easy, take all of 5 minutes to prep or faster {how fast can you crack eggs?} and will surely please even the the pickiest of eaters.

Mom's Cinnamon Popovers

3 large eggs
1 cup of milk
1 c all purpose flour
3 TBSP melted butter
1 tsp ground cinnamon
1/4 tsp salt
Pam or extra butter to grease muffin tin

Tools :: Blender or large mixing bowl :: Whisk :: Dry measuring vessel :: Liquid measuring vessel :: 12 seater muffin tin or popover pan.

Directions :: Preheat oven 400 degrees F. Grease muffin tin w/Pam or butter. when you grease the tin, I would suggest also putting a little Pam or butter over the ridge of the muffin cup since the popovers will rise up and stick. Add ingredients {3 eggs, 1 c milk, 1 c all purpose four, 3 TBSP melted butter, 1 tsp ground cinnamon, and 1/4 tsp of salt} to blender or large bowl and blend/mix until mostly smooth, roughly {30 seconds}. Fill 6-8 muffin tins 2/3 full. Bake at 400 degrees F for 40 minutes. Remove and serve with honey.

Note :: These are great reheated! If you double the recipe and keep {hoard} a few for later, just turn the oven on to 350 deg and pop a couple on the rack, they will crisp up again in just a couple minutes! YUM!
