Black Bean & Avocado Salad with Quinoa
Inspired by the Hungry Runner
1 can low sodium black beans (or soak up some dried beans!)
1 12 oz bag of frozen corn (or fresh if it's in season!)
1 ripe avocado
1/4-1/2 red onion
juice of 1-2 fresh limes {to taste}
5-6 stems of cilantro
1/2 cup uncooked quinoa
salt and pepper to taste
minced jalapeno {optional}

Make the quinoa per the directions on the bag and set aside to cool.
Drain and rinse the black beans (if you've decided to soak from dry beans don't forget to cook them!). Cube the avocado and dice the onion. Chop up some cilantro, juice a lime and then toss everything into one big bowl!
Stir to combine, making sure to coat all the ingredients with the avocado goodness.
