For those that aren't familiar, the Juicy Lucy is basically a cheeseburger with the cheese on the inside. It melts down, oozes out and keeps the patty moist! My family's favorite version has a few pickled jalepeno slices and cream cheese in the middle - creating the perfect spicy burger!

The Caramel Girl's Juicy Lucy
Ingredients
1 pound ground beef
4 ounces cream cheese
Approx 20 pickled jalapenos slices
Makes 4 quarter pound burgers
Directions
Form eight small "half patties." Divide the cream cheese into four equal portions. In the center of one patty, make a small indentation into the meat. Put cheese and a few jalapenos into the center of the patty.
Take another half patty and cover the cheese and pepper mix. Gently pinch the ends of the patty all the way around and smooth them over making sure the cheese & peppers are sealed tight inside to form your patty.
Repeat with the rest of the patties.
Light up your grill and grill to perfection.
